The medium-soft pecorino cheese certified DOP from Tuscany is considered as one of the oldest cheese on record: indeeed, Pliny the Elder wrote about it in Natural History, whereas nowadays it is one of the few Tuscan pecorino cheeses to be recognized by the European Union. 
 
The cheese has been aged for four to six months, comes with a fresh firm texture, and a robust bouquet. The bouquet is subtle and elegant and has notes of wild flowers and fresh herbs. It can be eaten alone, or with honey and jam. This Toscano cheese is produced in the Val D’Orcia (Siena) under strict supervision of the Consorzio of Pecorino Toscano.
