Last night I prepared a very quick dinner with the ingredients found in the refrigerator and the pantry. Luckily I found a bag of frozen shrimp that I had bought two weeks ago at the bottom of the freezer. I did a quick search to find a recipe and this is what I came up with: Pasta with Zucchini and Shrimp. The only equipment needed – a pan. Perfect! Here are the ingredients:

400 g of macaroni, 100 g o lard, 300 g of zucchini, 300 g peeled shrimp, lemon zest, olive oil, salt & pepper to taste.

I changed up the recipe a ‘bit and instead of using “lardo” I used butter, I also added a small onion a clove of garlic and a splash of white wine. Instead of maccheroni I used penne pasta but you can also use farfalle or fusilli. Our version turned out great!
