Processed entirely in Sardinia, bresaola is the fillet of tuna that is deprived of the bones, treated with salt. Finally it is dried for about 20 days with the addition of a few pinches of pepper, after which it is packaged in slices. Excellent in appetizers to be used as carpaccio or similar.
