When he cooks for Oscar-winning actress Jennifer Lawrence, he prepares the dish she likes best, spaghetti with fresh tomatoes and basil, while to Vin Diesel he serves classic bruschetta, of which the Fast & Furious actor is particularly fond. Chef Arturo Avallone arrived in Los Angeles with a dream that, with determination, talent and passion for good food, he realized, becoming in a few years a well-known Hollywood celebrities’ private chef.

The first star for whom the young man from Pozzuoli cooked for was the Avatar actress Zoe Saldana and her husband, the Italian artist Marco Perego. “Actor friends came to dinners at their house and asked me to go and cook for them. I started with this group of clients and it all became bigger from there.”

A word of mouth among Hollywood actors and actresses that led Arturo to cook for Sharon Stone, Adele, Cardi B, Kris Jenner, Cameron Diaz and also Italian influencers Chiara Ferragni and Fedez. “At the beginning, it was incredible for me to see them in person, because when you are in Italy you think of them as unreachable. Then, when you go to their house, you realize that they are just like you and me.”

Arturo, what is your first memory related to food?

As a child, I remember inviting friends over and pretending it was my restaurant, cooking for them and having lunch all together secretly from my parents. Over time, I realized that cooking gave me the opportunity to express my creativity, and so I enrolled in a cooking school.

What does food represent to you?

I am from Naples and there we love to spend Sundays all together and eat a lot of food. I come from a family of fishmongers and therefore I love fish, seafood, pasta with fish in general!

What do you like about this job?

The fact that a very intimate relationship is created between me and the customer. You have to understand what they like, and you have to create a relationship of trust, also because you go to their kitchen and cook for them. Each client is very different and it’s nice because I always do different things.

How is cooking for Americans, who are used to different flavors?

I immediately understood Americans mostly eat things that fall within the Italian cliché. So, at the beginning, I made a lot of Bolognese pasta because everyone wants it, along with ravioli, lasagna, tiramisù, bruschetta, your typical things. Then, I started to educate the customers, making them understand what we eat in Italy, combining food with wine and dessert.

Are you a traditionalist in preparing your recipes, or do you adapt them to local taste?

I have been asked to cook Alfredo pasta and, at the beginning, I was a bit more rigid and I would always say “No, I don’t do that,” while now if they ask me something I do it, but always giving it an Italian touch. Maybe I change it, and I explain how we do it in Italy — which often is not like they do in America. For example, here they use a lot of cream, it’s everywhere, like butter.

How do they see Italy?

They have an image of Italy as a country of excellence. Sometimes I have to force my accent and gestures to make everything more characteristic, almost to give them a way to travel to Italy despite being here. In fact, I also play Italian music, bring the food to the table and explain what I’m serving. They like to feel good, the experience in its entirety.

How do they relate to you?

The Kardashians haven’t interacted much with me, but Jennifer Lawrence and Zoe Saldana are always very friendly, I often remain after dinner to drink and eat with them. Liza Minnelli was very sweet and very energetic, she came to the kitchen to thank me.

How would you define your cooking?

I would say it’s very fusion. I had to adapt to California products that are good and go well with classic Italian and specifically Mediterranean flavors. I like to use fresh produce, a lot of fish, a lot of vegetables.

Any typical Italian dish that you introduced celebrities to?

Fried pizza! As soon as they taste it, they all freak out. In general, let’s say that they are a bit obsessed with vegan, sugar free, then gluten-free. I have to adapt. Sharon Stone only eats gluten-free for example. The first time I cooked for her I didn’t know it and I had to make up for it by changing the whole menu at the last minute!

Someone who has improvised as a cook?

Yes, Jennifer Lawrence loves to cook and cooks a lot, so she often joins me and asks me to teach her some secrets.

How has people’s relationship with food changed in this city since you arrived?

Los Angeles has changed a lot. There are many more restaurants, especially Italian ones. People travel a lot more and have learned to eat and drink,  so… it has changed a lot. For example, now everyone knows what carbonara is,  while five years ago it was not so well known. People are starting to appreciate true tradition, true Italian culture and good food.

Do you miss Naples?

Yes, I miss simplicity, friendships, family, our food. The things that in Italy are done in freedom. Here, everything has to be scheduled.

What dream do you have for the future?

I will probably be the protagonist of an American cooking show very soon. It’s early to tell, but let’s keep our fingers crossed! And I’m also working on a brand of Italian sauces. I would like to create a vegetarian and vegan line made here in Los Angeles, with local products but Italian in style. And maybe, one day, open a restaurant or a deli of my own.

Poi, quando vai a casa loro, ti rendi conto che sono proprio come me e te”.
Arturo, qual è il primo ricordo legato al cibo?
Da bambino, ricordo di aver invitato degli amici e di aver fatto finta che fosse il mio ristorante, di aver cucinato per loro e di aver pranzato tutti insieme di nascosto dai miei genitori. Col tempo ho capito che cucinare mi dava la possibilità di esprimere la mia creatività e così mi sono iscritto a una scuola di cucina.
Cosa rappresenta per lei il cibo?
Io sono di Napoli e lì amiamo passare le domeniche tutti insieme e mangiare tanto. Vengo da una famiglia di pescivendoli e quindi amo il pesce, i frutti di mare, la pasta con il pesce in generale!
Cosa le piace di questo lavoro?
Il fatto che si crea un rapporto molto intimo tra me e il cliente. Devi capire cosa gli piace, e devi creare un rapporto di fiducia, anche perché vai nella loro cucina e cucini per loro. Ogni cliente è molto diverso ed è bello perché faccio sempre cose differenti.
Com’è cucinare per gli americani, che sono abituati a sapori diversi?
Ho capito subito che gli americani mangiano soprattutto cose che rientrano nel cliché italiano. Così, all’inizio, ho fatto un sacco di pasta alla bolognese perché tutti la vogliono, insieme a ravioli, lasagne, tiramisù, bruschetta, le cose tipiche. Poi, ho iniziato a educare i clienti, facendo loro capire cosa si mangia in Italia, abbinando il cibo al vino e al dolce.
E’ un tradizionalista nella preparazione delle ricette o le adatta al gusto locale?
Mi hanno chiesto di cucinare la pasta Alfredo e, all’inizio, ero un po’ più rigido e dicevo sempre “No, non la faccio”, mentre ora se mi chiedono qualcosa la faccio, ma sempre dando un tocco italiano. Magari la cambio, e spiego come facciamo in Italia – che spesso non è come fanno in America. Per esempio, qui usano molta panna: è ovunque come il burro.
Come vedono l’Italia?
Hanno un’immagine dell’Italia come un Paese di eccellenza. A volte devo forzare il mio accento e la mia gestualità per rendere tutto più caratteristico, quasi per dar loro modo di viaggiare in Italia pur essendo qui. Infatti, suono anche musica italiana, porto il cibo in tavola e spiego cosa sto servendo. A loro piace percepire l’esperienza nella sua interezza.
Come si relazionano con lei?
I Kardashian non hanno interagito molto con me, ma Jennifer Lawrence e Zoe Saldana sono sempre molto amichevoli, spesso resto dopo cena a bere e mangiare con loro. Liza Minnelli è stata molto dolce e molto vitale ed è venuta in cucina per ringraziarmi.
Come definirebbe la sua cucina?
Direi che è molto fusion. Ho dovuto adattarmi ai prodotti californiani che sono buoni e si sposano bene con i sapori classici italiani e in particolare mediterranei. Mi piace usare prodotti freschi, molto pesce, molte verdure.
Qualche piatto tipico italiano che ha fatto conoscere alle celebrità?
La pizza fritta! Appena la assaggiano, ne vanno tutti matti. In generale, diciamo che sono un po’ ossessionati dal vegano, dai cibi senza zucchero, dal glutin-free. Mi devo adattare. Sharon Stone ad esempio mangia solo senza glutine. La prima volta che ho cucinato per lei non lo sapevo e ho dovuto rimediare cambiando tutto il menù all’ultimo minuto!
Qualcuno che si è improvvisato cuoco?
Sì, Jennifer Lawrence ama cucinare e cucina molto, quindi spesso mi raggiunge e mi chiede di insegnarle qualche segreto.
Com’è cambiato il rapporto della gente con il cibo in questa città da quando è arrivato?
Los Angeles è cambiata molto. Ci sono molti più ristoranti, soprattutto italiani. La gente viaggia molto di più e ha imparato a mangiare e bere, quindi… è cambiato molto. Per esempio, ora tutti sanno cos’è la carbonara, mentre cinque anni fa non era così conosciuta. La gente comincia ad apprezzare la vera tradizione, la vera cultura italiana e il buon cibo.
Le manca Napoli?
Sì, mi manca la semplicità, le amicizie, la famiglia, il nostro cibo. Le cose che in Italia si fanno in libertà. Qui, tutto deve essere programmato.
Che sogno ha per il futuro?
Probabilmente molto presto sarò protagonista di un programma di cucina americano. È presto per dirlo, ma incrociamo le dita! E sto anche lavorando a una marca di salse italiane. Vorrei creare una linea vegetariana e vegana fatta qui a Los Angeles, con prodotti locali ma in stile italiano. E forse, un giorno, aprire un ristorante o una gastronomia tutta mia.
